Not soft rock, because that's the pop/rock combination. I mean chill music, like Pink Floyd, some of Led Zeppelin, etc. etc. Stuff that isn't all screaming and shrieking guitars.

I've never heard of mellow rock but there is soft rock with bands like:
America
Air Supply
Bread
Eagles
Reo Speedwagon
Journey

There is also acoustic rock which is rock music played on umamplified instruments.

if you go to the 70s, look at what was termed the LA Sound .... that is, old acts (old for you all, anyway) like the Eagles, Jackson Browne, Linda Ronstadt, etc. This genre was often defined as "mellow" ---- pretty much anything that follows those lines would be termed 'mellow rock'

Not thinking there's an official category for that, but I personally would put bands like Pink Floyd, Meatloaf, U2, Journey, Reo Speedwagon, Steely Dan, Doobie Bros, etc., into that category.

There's not normally one called "mellow rock" but you could certainly one, although I wouldn't put most of Led Zep in it. Maybe some mid-Floyd. Lots of other bands, sure.

that would be oldies i think, lol or classic rock (led zep, pink floyd) . no but yeah they have a genre for everything nowadays.

i think maybe the term you would be looking for would be considered as a genre known commonly as "stoner rock"

slayer is a pretty mellow band. lots of love songs.

ummm some people call that metal...or a lot of classic rock is like that..thats just what was popular at that time....but its all rock
