I would say one of two things:
1. "Wine Theme" would be the kinds of decorations which would be used at a party, dinner, or room...In other words, the decor would be wine bottles, grapes, grapevines, trellises, goblets, etc..
2. If you misspelled and meant the term "wine them," as in "wine them and dine them," it means to try to impress or win someone over by taking them out for a very nice supper, or buying them gifts, etc..

If misheard, it could have been "winsome" by someone with a bit of a lisp. That particular word means something like "childishly charming". Hope it's relevant.
Or it's an invitation to an alcoholic party :) I'd like to combine the two, myself...
