I brine my turkey for 24 hours! Stuff it with aromatics while cooking. I choose a smaller bird and cook two if I need more for family. Brining beats basting every time!

I loosen up the skin on the breast and cram some butter and spices in there before I pop it in the roaster. Don't even have to baste it.
I don't really think it stands out that much but the family eats it, that's all that matters.

I slather crushed garlic and olive oil and rosemary etc. all over it...cook it in a cooking bag...the secret? u flip it 1/2 way thru the cooking...and the makes the white meat...oh so tender!!!
