At a reputable steakhouse, I order medium. At chain restaurants where the cooks often overcook steaks, I order medium rare. Steak should be pink all the way through, in my opinion.
Well done steak has no flavor.

I like my steaks grilled medium rare. With just a small bit of red in the middle. Yum.
I am with DFA on this, one does not "cook" a steak. You grill or smoke or perhaps even barbecue it.

Rare to Medium rare, it depends on my mood. I can't stand any steak that is over-cooked. It tastes like old shoe leather when over cooked.

Pink in the middle, but not bloody and covered in salt till it's white or just drowned in A1 steak sauce.
