Iron Maiden is cleary among the best, and while these guys may be more on the melodic side as opposed to the metal side, you should really check out the Swedish band Leverage. I've taken the liberty of attaching a live clip:

Let's go back a ways, shall we? For grins AND one of the more melodic albums I've heard in the genre, try Mick Ronson's "Slaughter On 10th Avenue." Kinda period piece, kinda cool. This was after the Spiders From Mars gig.
