It's a wooden cabinet, but I know it's not stained. It probably has some kind of coating, but I'm not sure.

I tried to wipe it up with a paper towel, but it got stuck to it and did nothing. Any tips from knowledgeable people out there?

A paper towel would not do the trick, as the syrup or ice cream is too thick .... try wiping the spill with a damp cloth, washing the cloth often until it is cleaned up, then Johnson and Johnson's furniture spray or lemon wood oil afterwards.

get some more Cherry Italian Ice
Rub it all over the top of the cabinet
let it dry
wipe it down
and act like you planned it that way

Put some oxyclean in some really hot, boiling water and try to soak it out, or maybe some Clorox bleach.
