Both (I prefer country ham for b-fast) and add sausage, grits, eggs (2 scrambled) and a side of pancakes (3 should do it, buttermilk if you have them).

I fix my family bacon biscuits and eggs or biscuits and gravy with sausage never liked the country southern ham too salty
