I assume she already got her engagement ring. So how about pearl or diamond earrings; a journal for her to record all her memories of this exciting time of getting married, the wedding, honeymoon, etc.; a spa day/pampering certificate would be very relaxing for her to take a break from all the wedding planning (manicure, pedicure, facial, massage, her hair done, or a combination of any of those).

first what are her interest? hobbies? favorite things or animals?
example if she loves dolphins, buy her a necklace or charm bracelet that has dolphins in it. if she loves a particular author, buy her the latest book. if she loves nature, take her for a day tour or vacation where you can hike or bike together.
if she loves just you, serenade her or sing to her. things like that. Sometimes the best gifts are the things that cannot be bought in a store.
