If you have a fair amount of leftovers, you can make a turkey pot pie using leftover dressing/stuffing. My sister makes this and it it great. You mix the leftover stuffing with a little melted butter and an egg (mixed well). Stir this up and then press it into a baking pan, to make the crust. Then you chop up leftover turkey, add gravy, potatoes, peas or green beans..and put it on top of the crust. You bake it at about 350 for 20-30 minutes til it starts to brown and is heated through.

I crave leftover turkey sandwiches. That in and of itself is enoguh reason to roast a turkey. But another great idea is to make a "chicken salad with grapes and walnuts" only with turkey instead of chicken. You can buy the chicken salad version at Fred Meyer. I don't have the recipe but I've tried to reproduce it. I think it has grapes (halved), walnuts, celery, and mayo. Not sure what else.

Slice off a slab, get out the whole-grain bread, honey mustard, a bit of lettuce, a slice of red onion so thin it is almost translucent, a thick slice of canned cranberry sauce; compose a sandwich that is to ordinary sandwiches what Beethoven's 9th is to the pop song "Feelings". Add a cold bottle of Sierra Nevada Pale Ale or a glass of Sonoma County old-vine Zinfandel.

Damn! I can hardly wait. I usually buy one 5 - 8 pounds over the suggested weight-to-guests ratio, to make sure I have enough for leftovers.

Eat it...or at least make good use of it somehow they didnt kill a turkey for it to be thrown away.... i like the turkey sandwiches idea ...will last you for a few lunches in the following week lol

Take a can of cream of mushroom soup and add some paprika, black pepper, oregano, chopped celery, chopped onion and chicken. Also add a can of potatoes if desired. If you do not use the potatoes, add some cooked pasta. Place in a greased casserole dish. Top with Parmesan cheese and bread crumbs. Bake for twenty minutes. Serve with hot buttered noodles, a green salad and a side of sour cream.
