Really, if ammonia didn't exist, it would make your life, and the fish's life much easier. Ammonia, however is ESSENTIAL to bacteria and plants. Fish waste is broken down by bacteria into ammonia (which plants can use for nutrients). Ammonia is still extremely toxic to fish, so bacteria break ammonia down into nitrite (which is still used by plants). Nitrite is less toxic than ammonia, but still toxic, so bacteria break it down into nitrate, which is much less harmful (and still used by plants). Ammonia is just produced, there is no way around it. It benefits ecological diversification in the wild, and that diversity was transferred into aquaria. Ammonia is vital for bacteria and plants, not fish.

EDIT: To start the cycle (nitrogen cycle), you must first introduce a source of "food" for the bacteria. In the nitrogen cycle, the first step is ammonia (NH3). Bacteria are attracted to the abundance of "food" in aquarium filters, so they colonize (grow in the filter) it. The bacteria "eat" the "food", and create nitrite (NO2-). The nitrite then builds up in the filter, attracting different bacteria that will "feed" upon the nitrite. They "eat" the nitrite, creating nitrate. Nitrate can be "eaten" (broken down) very slowly, but a much more realistic way to remove nitrate is through water changes.

There is no benefit to ammonia in an aquarium. It is very toxic to the fish as it affects their gill function.

No, and if the levels are anything more than minimal, it will kill your fish.
