Is it possible to force with strength two North(or south) poles of two separate magnet to be touching each other ?
If yes what will happen if we release them from touching ?

It is possible if you overcome that repelling force. And according to Newton's 3rd law of motion, they will react by getting away from each other once that force is taken away.

Depends on how weak the magnets are and how strong you are. It is fairly easy for an adult to take a couple of alnico magnets of small size and push them until the metal is touching. When released they spring apart or snap around so NS are touching.
The hotshot disk ceramic super magnets and bigger alnico are much harder to push together and the hot shot ones can hurt as they squirm out of line, turn over and pinch skin.
If you arrange them so they can't flip (like stacking on a pencil the donut shaped sintered magents sold for hobby stuff), then the magnets will repel until the force equals the weight and sit there and can be bounced on their fields.

Yes they can be touching if the force is great enuf pushing the two magnets together. When you release them however when you release them then the magnets will repel or move away from each other because of the magnetic force.

normally no, you can not force two poles of equal polarity to connect with each other, however if one magnet was way more powerful than the other, it is possible that the stronger one would realign the polarity of the weaker magnet

if the magnets aren't super strong you can force them to touch each other. when you let go all that will happen is the magnets will flip around and stick together N-S because that is how they are naturally attracted.

The mag-lev high speed bullet trains in Japan and other parts of the world use that exact idea.

What would happen if we release them from touching? They would fly apart from each other.

yes you can but with small magnets and when releasing them it will just be like they are pushing away from each other

yes, if the magnets are weak enough, or you are strong enough. Once you release them they will push each other apart.

Yes you can, if the magnets are small... as soon as you let go they will repel.
