clean is a requirement in food service businesses. and clean comes from water and soap.

then there's the matter of what you sell -- many foods need to be cooked in water [soups and stews], or cleaned in water prior to preparation [potatoes before baking], etc.

and you serve water to all your customers as either water or coffee -- and you'll be selling a lot of coffee in a diner every morning.

***
summary -- for any outage over a few hours, the diner closes and can not reopen until the water is restored.

however, bills still have to be paid even though the diner isn't open. and food will go bad if the outage is unexpected and prolonged.

might cause the business to fail completely -- close permanently.

***
as to the owner's income -- he has no salary [who would pay it?], and lives solely on the profits of his business. In a real diner, he's probably the head cook, too.

If the water supply was turned off it would cause many problems. It would affect sanitation ( dishes could not be washed, toilets could not flush, hands and tables and floors could not be washed). Many of the menu items that include water for cooking could not be prepared. Usually when this happens the Department of Sanitation closes a restaurant.

Not having water will shut you down completely. COMPLETELY. You use it everywhere-- cooking and cleaning in particular. You will have instant sanitation problems from your kitchen to your dining area to your restrooms. You will have to close your doors and you won't make a dime.

OMG! water! water is life! you drink it, use it to cook, use it to wash dishes, clean stuff, the bathrooms...water is essential in a restaurant!..otherwise how would you cover all those services?...I think you would lose days of productive work and therefore lose money?

you wouldn't be able to cook, can't wash dishes, can't make certain drinks, can't sanitize, can't get ice cubes, can't have functioning bathrooms, truthfully no one would come so you wouldn't be making really any money when the water would be off.
