they absolutely can make or break how your butt looks. too small, too high, too much embellishment...all change the shape and appearance of your butt.
i have one pair of jeans that just make my normally nice curvy butt look flat and plain. i think the pockets are too big and too low.
if you have a big butt for example, stay away from those flap pockets or embellished pockets. the just draw emphasis to your butt. try smaller angled pockets instead. and on the flip side, if you have a small toosh, buy the flap pockets, with embellishment.

I in my view feel that pants with wallet definately make your butt seem smaller. The pocket breaks up the gap that one's however takes up in a couple of pants. With out wallet it is like an empty wall.

Pockets that are big make your butt look even bigger. Pockets that are closer together make it look smaller.
It isn't necessarily the space between the pockets, it is the size.

the space between them can make ur but look wide and flat so the ones that are not far off to either side are most flattering on everybody

Yes, but not as much as how high. You want them placed slightly below your bum- like they are lifting it. It will make your butt look firm and not saggy:)
