Everett, Lynnwood, Bothell area is nice and not to far from downtown. As far as affordable...there probably just as affordable as anywhere else in the Seattle area. Snohomish is nice and quaint.

Sammamish is far for "rural" - most of it has been developed. And it's VERY pricey. If you're looking to buy a home you're not going to find anything under $400K. And rent is pretty high there as well. Most areas of Washington have LOTS have trees. Are you not in this area currently?
If you really want something more remote then Duvall, Carnation, Fall City, North Bend, or Snohomish would be appropriate. More affordable in these towns and still within an hour of Seattle.

You are pushing it with the 1 hour or so limit from Seattle. As others have said, especially when you take into account the traffic around here, 1 hour doesn't get you to "very very rural" for the most part.
Vashon Island will give you that feel - but you'll have to count on ferry service to get on and off island. Sammamish isn't really rural anymore.
Carnation and Duvall are more rural. Silvana area is more rural (you could find a place anywhere on the Pioneer highway between Silvana and Mount Vernon and get what you are looking for) But you'll be hard pressed to get into Seattle in an hour. It would be more like 1.5 hours.
The area around Snohomish is still mostly rural - many areas are zoned for 5 acre lots, which limits how much building there is.

Like has been said already, with only one hour away as a limit, there are not a whole lot of options that are very rural. The urban sprawl that has happened here isn't nearly as bad as many cities, but still it's hard to get too far out of town in an hour. Head east towards the mountains and North Bend has a lot of areas that are very tree-oriented and not as many houses. You'll find a lot less people around, but actually coming back through I-90 around Issaquah is a terrible time consuming ordeal much of the time. Duvall and Monroe are pretty rural. Up north, around Lake Stevens, Snoqualmie, Arlington and such are pretty rural and there's way less people, but getting back to Seattle again might be a challenge in under an hour.

Sammamish, Sumner and Bonney Lake are in the midst of a housing boom. There are more subdivisions than trees there now. Really, any place within an hour of Seattle is a commuter town, and has a lot of houses. Try North Bend, Duvall or Vashon Island.

My suggestions:
North Bend, Yelm, Buckley, Graham, Orting, Duvall, Carnation, Vashon Island, Black Diamond, Maple Valey, or Falls City are your best picks. Another option: Have a Realtor show you around the unincorporated parts of King County, Pierce County, Snohomish County, and Thurston County. Despite what some of these people are saying, there are still plenty of rural areas left (close to cities/an hour away from Seattle-- assuming traffic isn't backed up) with lots of trees, acreage, and woods.

I think that going east of Seattle is your best bet. Yes, the Sammamish area is fine. You can also check out North Bend or Fall City, which are more rural. Also, there is Black Diamond area in the south.

If you are looking at rural areas your kids won't be able to walk to school unless you live next door to their school. Rural roads have no sidewalks. They have a narrow gravel shoulder and usually a drainage ditch next to that. My son's best friend was killed trying to ride his bike to school on one of those rural roads. Meth labs are also a problem in rural areas. Washington State has been hit hard by meth labs. Pierce County, where Ft Lewis and Tacoma are, is one of the hardest hit counties in the state but other counties have it too on both sides of the state. Over the years there have been three meth labs found within a mile radius of my home. EDIT: J.A., I live in the Graham area.

I used to deliver freight to Sumner and found it to be very friendly. Bonney Lake is below Sumner and may be out of the city. It is about 40 miles south of Seattle. Good luck
