I know he could play the piano and violin, but could he play every instrument he used in his compositions or did he just know how they sounded?

He was a very fine pianist, violinist and violist. He toured Europe as a child playing the violin and earned a good deal of his living later in life as a piano virtuoso (clavier being a piano).

Nearly all his piano concertos were designed for himself to play, although he only wrote the solo parts down when he needed to (for publication or for someone else to play). before that, he carried all the solo parts in his amazing head.

No composer plays all the instruments he writes for - that would be too much. However composers have to study the range and capabilities of all the instruments. Mozart understood string instruments from the violin and viola. He didn't like the flute much but he did a lot to popularise the clarinet (which he loved), then a fairly new instrument without a regular place in the orchestra.

He was also a mean skittles player, apparently.

In conjunction with del_icio's comment, Mozart also wrote a Piano Concerto at the age of FIVE that was so DIFFICULT, no one could play it!!! Imagine!!! - El Chupacabra -

He also played the clavier and the organ..I never heard anything about winds or reeds. I think he just heard the different parts in his head. Amazing.

Not only he played the piano and the vilon,he could play the Harpsicord as well...
