I have a 20 gnome lock on a pve server which is okay but I really like horde and I just made that guy to play with some people (who ended up leaving), so should I switch it to undead on a PVP server?

Do you like PvP? Go for it. I don't think I could handle a PvP server; I hate being killed while I'm in the middle of something and have to corpse run, and I think it would really irritate me if someone killed me on purpose.
Switch to Horde if you want; I've played both and prefer Horde. I loved playing my warlock; they're a lot of fun, high damage dealers.

Only you can decide that. However, a 'Lock is easier to level solo than a lot of the other classes because of your demon minions.
