We will be having-
Turkey, sweet and mashed potatoes, gravy, stuffing, green bean casserole, corn pudding, deviled eggs, a veggie tray with dip, rolls, cranberry relish, and pumpkin and apple pies and brownies for the kids.
We typically do a little more but we moved last week and are cutting back to the foods that feel most like the holiday (I am to tired after getting everything squared away with the house to cook for 3 days:)

I created this two days ago, and it was AMAZING!
BUTTERNUT SQUASH AND GORGANZOLA STUFFING
Meat of one large, cooked, butternut squash (see below for details)
One box of sage stuffing
One stick of butter
Two cups of water
1/2 cup to 1 cup of Gorganzola cheese
Salt
Pepper
Bake your squash, or re-heat your pre-cooked bought squash meat.
Put one box of sage stuffing in a bowl. Then measure two cups of water in a microwave safe bowl, add one stick of butter and microwave for 1.5 minutes or until hot. Pour buttered water in stuffing bowl. Mix until moist.
Add the warm mashed meat of one whole butternut squash
(If you can buy pre-cooked squash use it, but if not you will have to cook your squash before making the stuffing. To cook squash: Cut squash in half, making two "boats". Brush each side with a teaspoon of veggie oil and set in a deep metal baking dish. Cover with foil and bake for 30-40 minutes at 375. The meat should be soft but not gooey. Let squash cool for ten minutes (it will still be pretty hot so be careful) then scoop out the meat using a spoon - you can also use a knife to loosen the meat from the shell but be careful not to puncture the skins if you want to use them to serve the stuffing. leave about 3/8 of an inch of meat in the "boats". Mash the meat while still warm.).
After adding the warm squash meat to the stuffing mix, add a table spoon each of salt and pepper. Then add half a cup of gorganzola cheese and stir. Taste, add more salt, pepper, cheese to taste. I think I used about 3/4 cup of cheese in mine last night.
Then put warm stuffing mix in a baking dish, or in your squash bowls, and broil at 500 until crispy on top. Be careful not to burn it, this will only take a few minutes depending on your oven.
Enjoy!
