Criss Angel made himself disappear behind a coffee table by simply using a mirror at the bottom of the table.
On stage, you can use trap doors, or special props like David's Copperfield ones. There are hiding compartment that cannot be seen.

Or if your talking about magic they only throw a little ball which explods with dust giving the man enough time to slip into the trap door to under the stage then they do the same with him coming back.
