Do you mean?
(x-3) - x² / (x-3)

Take these as two fractions:
x - 3 .... x²
------ - -------
... 1 .. x - 3

To subtract fractions you need a common denominator. So multiply the left fraction by (x-3) on top and bottom:

(x - 3)(x - 3) ... x²
----------------- - -------
...... x - 3 ...... x - 3

Now you can expand the numerator by multiplying out:
x² - 6x + 9 ..... x²
----------------- - -------
..... x - 3 ....... x - 3

Now subtract the numerators, and combine the denominator into one:
x² - 6x + 9 - x²
-------------------
...... x - 3

The x² terms cancel out.

-6x + 9
----------
.. x - 3

You can factor out a common 3 in the numerator:
3(-2x + 3)
--------------
.. x - 3

But that's about it...

x-3 cancels the x-3 below it, leaving you with negative x squared.
