When one has an oatmeal bread it is less carbohydrate and is normally taken by diabetic patients or who don't like sweetness. Less glucose but with raisins it has a different blend. It taste better and nice with raisins as it has sweetness in it when consumed. It all depends on individual requirements as both are applicable for consumption. That is why your turkey says yes to the raisins in it owing to its sweetness blend in it..

Raisins are good in dressing but I'm not sure about oatmeal. You can use oatmeal in meat loaf... I would stick to bread cubes or cornbread for the dressing.

I sort of have an intuition for this stuff, and yes, I think that the two could be interesting. The main thing is to NOT overdo it; do play w/ ingredient proportions and taste test-my general feeling is too much could kill it; keep it subtle.
