I make turkey noodle soup, but I don't just use the meat, I use the whole carcass and make my own stock.
Pull as much meat from the carcass as possible. Set aside in a dish.
In a large stock pot, add in the carcass, and enough water to cover about two inches above. Heat until boiling, then reduce heat, cover, and cook on low for about 1-2 hours.
Turn off heat, let cool on stove top (or outside if it's really cold). Remove carcass and discard. If you want to make the soup the same day, skim off the fat now. If you want next day soup, place entire pot in fridge, then skim fat off top when ready to use.
Once fat is skimmed off, gently heat stock over low-medium heat. Add in vegetables, herbs, and seasonings. Once stock is hot, add in left over meat. Bring soup to a boil, add in your favorite noodles, a few handfuls. Boil until noodles are done cooking. Serve.
This is my husband's favorite recipe, and the soup usually lasts us for several days, and that's after we've already had several days of turkey leftovers.
You can also shred the meat, add BBQ sauce, heat, then serve on buns for pulled turkey BBQ sandwiches.

Turkey Soup..Turkey Enchilladas, Turkey Salad (Just like chicken salad only use turkey), Turkey Sandwich....
I make enchilladas and soup and freeze them then when I need a fast no brain pop in the oven meal I have one ready..
Get a disposable foil pan for the enchiladas and theres no clean-up after... Seal the pan in a ziplock freezer bag and it will store for a couple months...
I make the soup in a large pot then divide into individual servings in ziplock freezer bags... My family and pop a bag into the microwave and have homemade soup in a few minutes...
I also purchased divided microwaveable dishes with covers.. I put a little of everything from thanksgiving into the dish and freeze, my husband takes them to work like t.v. dinners... (Also a great way to make sure an older relative eats healthy meals... Up until my grandmothers death I used to fix a little extra with all our meals, place a serving in a divided dish and freeze, once a week I would take her full dishes and retreive the empties... She always had home made meals to eat without any of the work and we were sure she was eating something more healthy than manufactured t.v. dinners or soups all the time..)

I make Turkey Chili
also I don;t know what this is called so I'll describe the best I can
You will need"
10' tortillas
fresh spinach
cream cheese
shredded cheddar cheese
enchilada sauce
shredded turkey
Directions:
Spread cream cheese in a thick layer in the tortilla
layer spinach on top
layer the turkey
sprinkle cheese
add enchilada sauce
Roll them tightly, cover them and cook for about 25 minutes at 350o.
Yummy!!!

A really great use for turkey- shred the meat (mix of both dark and white meat), and mix with either a can or two of Herdez Salsa Verde, any red salsa, or canned green chiles, if you don't favor spicy flavors. Microwave the mixture, and serve wrapped in warmed tortillas with lettuce, tomatoes, and shredded cheese. You can also use this as a filling for really great enchiladas! (And just to let you know, it was this very recipe that won my now-husband's heart- he jokingly proposed at the time! Now married 4 years!) Enjoy! :)

Make Turkey stew. Just throw the remaining turkey,stuffing, peas,carrots,gravy,mashed potatoes in a big pot and heat. Its the best tasting stuff you will eat. And it gets better the day after.

this is so yummy, I make it last year
Leftover Turkey Casserole
1-6oz. pkg. dry bread crumbs
1-16oz. container sour cream
1-10.75oz. can cream of mushroom soup
1-10.75oz. can cream of celery soup
1-1oz.pkg. dry onion soup mix
2-14.5oz french style green beans (drained)
2-cups cooked chopped turkey meat
1) preheat oven to 350
2) prepare stuffing according to pkg directions
3) In a medium size bowl, mix sour cream, both soups and dry onion soup mix.
4) spread green beans in a 9x13 baking dish, top with layer of turkey, pour soup mixture over turkey, top with stuffing.
5) bake 30 minutes or until browned and bubbly.

I take my turkey and add mashed potatoes and stuffing. Cover it all with gravy. It makes a great casserole.
