i put in 8 cloves or garlic,
a little more than half cup of vegetable oil
1 and a half juiced lemons a pinch of salt

threw it in a blender and it was still watery like so i thru in 2 tablespoons mayo and it was still watery.

the stuff i get at the shawarma places r thick and fluffy like mayonnaise consistency.

how can i salvage my garlic sauce?
should i add a small mashed potato to it? is tht what lebanese ppl do? help cause i dont want to throw it s good but wrong out, it taste consistency.

your recipe is OK. I do put lemon juice with my garlic, it soften the hard taste of the raw garlic, and whiten the mixture, but you need to work the oil and garlic together 1st as per above explanations.
PS: sometimes, the garlic itself is no good for this recipe, cause it is still fresh and juicy, and no matter what you do, it will stay running.
you need to get the garlic for "mouneh" which has been left to dry for a while in the bekaa valley.
for our watery sauce, you can either add some mayo, or mashed potato, even some "labneh". If I were you, I would use it to marinate some chicken for a barbecue, and start all over.

You're supposed to emulsify the garlic with the oil. As well, garlic paste does not consist of lemon juice...it's just garlic, a bit of salt and olive oil.
Put the garlic cloves in the a food processor or blender and drip/stream oil slowly as the garlic is being pureed. Then it will become fluffy and thick.
Putting a boiled potato will weaken the flavour and intensity and can make it 'pastey/gluey'. Better to not use potatoes.

As Dee said above, the trick is to run the garlic in the blender and feed it the oil a little at a time, Potato or a little bread might save the day but it does weaken and alter the taste.

I would put it in a jar in the fridge ( the oil will keep it) and use it for basting or marinating BBq chicken or baked potatoes.

yep as Dee above says.. its emusifying that you didnt do.. but still dont throw away your stuff.. freeze it in little bits (ice cube trays are good) and use it to cook with later
