Glad you asked! I was just going through some of my old guitar mags when I came across Guitar Player's April 2002 issue with the feature, "50 Unsung Albums That Every Guitarist Should Own." Sounds spicy, doesn't it? Rather than list them all, I'll try to limit the entries as they pertain to your question (70's), and then let the R&P universe dissect them.
George Benson - "Bad Benson"
David Bowie - "David Live"
Stanley Clarke - "Stanley Clarke"
Billy Cobham - "Spectrum" (a Fave featuring Tommy Bolin)

REO Speedwagons Live Get What You Play For. Gary Richrath chews that guitar to pieces on Flying Turkey Trot, and the 2 record set was good all the way thru.
We Sold Our Soul For Rock-n-Roll by Black Sabbath. Iommi cuts loose and is classic.
The Godz self titled album The Godz. Great guitar.

Forgot one...Frank Marino and Mahogany Rush Live album. He does an amazing job covering Purple Haze. Well worth a listen.

"Split" by The Groundhogs often seems to get forgotten.Great songs, some of the best blues-based riffs I've ever heard, and Tony McPhee's guitar playing is superb throughout
