devil may cry4 got mixed reviews, as did Assassin's Creed (some people thought it was downright boring). The best RTS game I can think of is Command and Conquer 3: Tiberium Wars. The best FPS is hands down Halo 3 (MOH Airborne is also a good buy). The best random game is Guitar Hero III. In racing games, I think a new Need for Speed just came out (Pro Street). I dont know much about sports games. As for RPG's, Blue Dragon got mixed reviews. Bioshock was widely liked. There is a MMO Final Fantasy (but you have to pay for an online subscription). For modern Warfare, Call of Duty 4 is supposed to be excellent. Enjoy

I checked Amazon.com, and "Assassin's Creed" is the #1 bestseller in Xbox 360 video games.
1. Assassin's Creed
2. Call of Duty 4: Modern Warfare
3. Mass Effect
4. Halo 3
5. BioShock

Devil may cry is a good game, but as you might have noticed, the franchise is not really keeping up the hype of the first game. If you liked the other 3, that's definitively the game you should go for: it's your passion you've to feed, not ours.
And, as you might have noticed from other people's answers the actual killer apps for the xbox are Assassin's Creed, Mass effect, and finally Halo 3 and Call of duty 4.
For the first 2, you can find a "good and bad" list in here, together with some words about another good, but less known, game, Kane and Lynch
http://www.ctrlaltdel-online.com/news.php?i=1517
The "reviewer" is not bad in pointing out lights and flaws of the games
(and here http://www.ctrlaltdel-online.com/news.php?i=1519 he's doing an even better job on Assassin's creed)
My philosophy is, anyway, still the same since some years: "go for the past (and cheap) good games you missed to play before throwing yourself on the latest (and most expensive) releases"
Some good games are, for the xbox, "dead rising", "bioshock", "Half Life - The orange box" (if you love the fps you're going to make the best of it and make it last a couple of months min.), "call of duty 4", "forza motorsport 2" for the race genre

Fight Night Round 4, like all sequels, only expands on the previous installment. Sure it's better, but I'm willing to bet you played Fight Night Round 3. Skate 2, once again, improves on the original but does it make any innovations that will truly cause you to thoroughly enjoy it? I myself have beaten multiple Tony Hawks, and it is mindless fun, but I never find myself caring. Fable 2, did you play the first Fable? Then you've played Fable 2. Fallout 3 though, this is a game that can burn hours upon hours of your time. It can be a very laid back game, consuming upwards of fifty hours of your time, or you can blow through it in less than ten. How many other games give you the ability to nuke the first major city if you dislike it, or destroy the entire population of a town at your whim? That's freedom of choice, right there. Fallout 3 is my suggestion of the games you listed.
