Broccolli Casserole. I make it every year for both holidays. Even when I ask, they say well aren't you bringing the broccoli casserole? So its just assumed. I double this for my large family.
1/2 cup mayo
1 egg
ritz cracker crumbs
1 16 ouonce package frozen chopped Broccoli
1/2-1 cup cubed Velveeta Cheese
1 small onion finely chopped
1/2 can cream of mushroom soup
butter
Pre-heat oven to 350 degrees.
Microwave broccoli on high 6 minutes, drain well. Combine remaining ingredients except for cracker crumbs and butter. Add mixture to drained broccoli and pour into a greased pan or baking dish. Put ritz crackers in large plastic bag and crush with rolling pin or fist. Sprinkle crumbs on top of broccoli mixture and dot with small tabs of butter. Bake about 45 minutes.

Lasagna Recipe Just add veggies somewhere in the recipe
2 tablespoons olive oil
1 leek, cleaned and sliced
4 cloves garlic, minced
1 medium zucchini, chopped
1/2 cup sliced fennel
1 (14-ounce) can artichoke hearts, drained
2 (14-ounce) cans crushed tomatoes
2 tablespoons fresh oregano leaves, chopped
4 whole-wheat lasagna noodles, cooked as directed on package
1 (4-ounce) package feta cheese, drained
3/4 cup shredded part-skim mozzarella
Preheat oven to 350 degrees F.
In a medium saucepan, heat olive oil over medium-high heat. Add leeks and garlic and saute until translucent, about 1 1/2 minutes. Add zucchini and the fennel and saute for another minute. Add artichoke hearts and crushed tomatoes. Bring to a simmer and then add oregano. Stir and remove from heat.
Cover the bottom of a 13 by 9-inch pan with 1 cup of the tomato mixture. Top with 2 lasagna noodles. Top with half of the remaining tomato mixture. Sprinkle with feta cheese. Add remaining 2 lasagna noodles and top with remaining tomato mixture.
Sprinkle with mozzarella. Bake for 35 minutes or until bubbly. Let stand for 5 minutes before serving.

I make 7 layer salad and this taffy apple salad to die for! my aunt always makes some vegtable medly casserole dish with mixed veggies and melted swiss cheese, I'm not sure what else is in it but it's so good!

Any of your normal vegetables: you can have a cold platter (celery, carrots, olives, radishes, etc.) and you can always have broc. =] there are some great broc. recipes out there!
