my toilet keeps going on and off through the night...then a big bang in the pipes......how can I fix it besides turning off the water!!!?

The other answers are right, this sounds like a leak in your flapper. If you own an "american standard" toilet, there may be a large actuator instead of the more common "flapper". check this out first.
either way, if your current flapper is black, run your finger under the underside of it. if the blackness comes off all over your finger, it's due for a change. if it's made of a different material, you should be able to feel any other deformities in it.

a new flapper is about $5... and the AS actuator is about $10...

cheap and easy replacement. go for a neoprene flapper this time, as i have found them to last longer, and stand up to harsher water conditions.

Sounds like the flapper is leaking. This makes the fill-valve refill the tank (even if it is just a small amount of water). Turn off the water supply and flush. Lift the flapper and wipe off the bottom of it and the seal below it. deposits can build up on them. Make sure the chain/strap that lifts the flapper when you push the flush handle down is not too tight and allowing water to seep out. If all else fails, buy a new flapper.

Try changing the flapper in the tank. rubber gets old and they start to seep. common problem and easy fix. buy the new one first, get the toilet brand and take a quick look at it for match purposes.

drain the tank wipe off the flapper and put a coat of petroleum jelly on it. if it is worn the petroleum jelly will help help it.
