Whats the difference in the way they are formed and the way they look?

A sea canyon is normally considered to be an extension of the kinds of canyons found on land and are caused by erosion from river outfalls, subsidence of land canyons and occasionally from continuous current flows. With respect to the water surface and to the bottom profile they are not very deep - usually a few hundred feet and are commonly in or on the continental shelf.
Ocean trenches are the result of subduction zones where one techtonic plate is going under another. They are much much deeper - thousands of feet is typical and normally fall beyond the continental shelf and may be in mid ocean.

not a lot although canyons are found at the bottom of trenches. mostly a matter of semantics.
