You have a lot of options. There are formal programs, and then there's more of a do-it-yourself approach.

Many universities in the US offer winter session classes. If you have a city you'd like to explore... say, Boston or NY or LA, this could be a perfect opportunity to do so. You'd check out what universities are in that town, see what they offer over winter term (January, usually), and enroll via continuing education. You could get a sublet - a student from that university who's going home for the break would be glad to rent a room in their apartment to you.

Universities in Europe don't have a winter break at the same time as unis in the US do. Their semester tends to actually break for Christmas, then they have finals after the new year, and have a break for Easter - it doesn't match, so that's not going to work.

You could check with your internship office at school, and see if they have anything that you like that's available over winter term. You'd get out of town, plus get work experience that will look fabulous on your resume.

You could do a student exchange over the intersession. I'll link to some, below, which may be of interest, and you should also check with your own university's student exchange office to see what they have available.

You could volunteer, full time, with Habitat for Humanity or something of that sort, either locally or in another state.

You could simply take off to Prague for a month.

I mean, wow.

It depends what you and your friends are into. Firstly, its spring break, and for at least one week i would not stress over your studies- there will be plenty of time for that afterwards. I know a lot of my friends are spending time and vacationing with their families, but personally my friends and i plan on doing some high adventure activities (hiking, white water rafting, perhaps even getting out to the grand canyon). Really, i encourage you to simply do what you want for your time off- this will be good for your stress and energy levels for a while afterwards.
