Because no one is absolutely ingnorant. So no one is absolutely happy. If you believe that the majority of people are ignorant, then you are making a general statement. This implies that more people should be happy because more people are generally ignorant.
The old adage "ignorance is bliss" might be meant for much smaller situations. Consider that a lover does not know his or her lover once had many lovers. That promiscuous lover has since been faithful and will continue to be faithful. So the prude lover is ignorant of the other's past, and is therefore blissful. But if he or she gained knowledge of the past promiscuity of his or her lover, then there might be some discomfort. So better to keep the prude ignorant and blissful of such things. But this is still not perhaps the right analogy for your question.
Consider the bible story of adam and eve. I'm not religious. But it has some merit, I think, in regards to the point you are trying to make. Hypothetically speaking, Adam and Eve were two people who were just about as close to absolutely ignorant as two people can get. They only had one temptation, that is the tree of knowledge of good and evil. "Don't eat from it", God told them. But they ate from it anyway. And in doing so, they stopped being ignorant. They learned of such things as good and evil and...nudity, what fun! But as a result, they were kicked out of paradise. So loss of ignorance resulted is loss of happiness for Adam and Eve. But this was at a nearly absolute level.
Could you imagine a world as ignorant as the fictional Adam and Eve before they ate of that imaginary tree?
The truth is that we have a world filled with hungry, worried, hard-working, pain-filled and tired people. This is the majority of the human population. They are not ignorant to the dark sides of life. Only a few children born to the wealthy might be ignorant to such things.
That is why more people aren't happy.
Even so, I reject your analysis (if it implies that most people are not happy). I believe that most people are happy, despite the hardships of living. If given enough food and shelter for survival and social or familial interaction, then they are more happy than not. Health does wonders for one's mood.

In Buddhism, there are three basic emotions of passion, aggression, and ignorance. You can either try to draw someone or something toward you, push it away, or ignore it. The ironic thing, though, is that if you ignore something, you have to kind of know it's there. It takes some effort to do the ignoring. So, ignorance is not being happy, but rather being numb or dull.
But, in Buddhism, there are also six realms of existence in the un-enlightened world. These can be understood as states of mind or as places. If someone is extremely ignorant, they can find themselves in a kind of heavenly state of mind, where everything is wonderful and beautiful. They are having a blissful state of mind. It is temporary, like everything else, and is based on attachment rather than enlightenment. It is a blissful state of mind. In other words, bliss is ignorance.

You have to know you are ignorant before you can be see the bliss.
People are so ignorant they can't even admit to themself that they are ignorant.
It's actually the opposite. The ignorant think they know everything. Most of them are on here. You can tell them a mile off. They are the one's that start their answers with. You're wrong!

People who actually believe "ignorance is bliss" are stupid because they believe in an absurdity although they know differently. Asking if believing an absurdity somehow should make one happy is compounding absurdities. Put it to bed.
It is one silly example of the ostrich strategy which is to bury your head in dirt and pretend that the approaching dangers or surroundings will vanish if you can't see them .
Stupidity is worse than ignorance because stupidity involves an attitude and a choice. I wish this shibboleth would disappear from our discourse here at the YA philosophy category. There are more meaningful things to ask about.
That is, if you want to do real philosophy!
note: ignorance does not equate to being unconscious or unaware that something is happening. ignorance is lack of knowledge and understanding by a conscious mind.

Because most people aren't really ignorant; they are misinformed or know just enough about something to make them dangerous to themselves and others. They are also not happy; they are usually bitter and "black holes" of good energy
