Could be a lot of things if you "just replaced some parts". Often I find the problem isn't where you think it is so eliminate the easy things first. Here's my suggested diagnostic sequence.

1. Make sure your air cleaner is clean and properly installed so the clean air flow to the carb is what it is expecting.
2. Make sure the choke is opening AND closing properly.
3. Make sure the throttle cable is properly adjusted (slack is just taken up).
4. Make sure there aren't any left over parts from your carb reassembly.

Then If it starts and idles sounds like the choke circuit and pilot jet are apparently OK so I'd check the needle/needle jet and slide assembly next since they are responsible for getting the correct air-fuel mixture to the engine as it comes off idle.

Always give year, make, engine size and "model #" when asking questions. We need all of that info to give an informed answer.
If the carb is a "CV carb" (Constant Velocity - rubber diaphragm on the top of the throttle slide) it could be torn, or when the top of the carb was installed, it came out of the grove and not making a seal.
Whatever type of carb - the needle might be loose, falling out of the slide.

you need to clean the carburetor really good. It sounds to me like you have some old gas that has crystallized in the bowl.

Check your jets and your float level. Also check for vacuum leaks around the intake.

Don't forget to check overall fuel flow. Make sure your filters & screens are clear.
