Ah, great question. I don't think we ever get to the best in life always striving for the best, yet the best is that brass ring that we continually reach out for but do we grasp it? If we think we obtain the best, then why strive for better? It is all relevant as to what we define as best. Think about this: Is Donald Trump satisfied with what he defines as best? Bill Gates? They have it all, yet they continue to strive for more. This is human nature.

Because anticipation is better than actually getting something. Because the hunt is better than the kill. There is excitement and passion in chasing a girl who doesn't look at you once. Similarly, in situations where you can choose to save the best, the goal, for last, you would tend to do it.
Also, it's a better feeling to be undergoing the "best" when you know the "worst" is already past you, than going through the "best" with the "worst" looming ahead. For example, it is with a degree of guilt that a procrastinating kid watches TV, whereas one who does his homework first is completely free in watching TV afterwards.

Perhaps because in a chain of happenings, every next link moves us away from the previous one and it is the last that lingers longer in memory and thus makes the most impression....... we save the best for the last so as to make this lasting last impression the best.

Let me try this...You go on a pursuit looking for the best. You reject all one by one on the way, because you are not satisfied one way or the other. Something's amiss. Then you find the one that makes you so happy, it brings out the very best in you and you look NO FURTHER. That's the last and final destination for you.....revel in the beauty of your discovery and give it your all!!!

Why see it as the last?
It is but a step after the one before.
