Well I know that the platys and mollies you can tell them apart. Same goes for the bettas. The mollies and platys are as follows the boys are going to have a straight fin under their belly and the girls are going to have a fan like shape you know one of those chinese paper fans. Male bettas are more colorful and their fins are longer. you cant house two males together they will kill eachother. The females are less colorful and their fins are shorter. Try anatomy of fish books to see if they give out any useful info on sexing fish.

It all depends on the type of fish.

Most livebearer males will have some sort of external fertilization structures.

Cichlids can be sexed by the shape of the anal pore

other fish can be sexed by size and color.

Characins, (tetras) and some cyprinids (goldfish) don't exhibit much if any sexual dimorphism (the difference between males and females) so they only way to sex them is around spawning season/time when the females are fatter and full of eggs. (goldfish males would have breeding tubercules on his face too)
