I guess it depends on what you mean by "less $$"?
Assuming you want to go really cheap...
The north end of the strip (Sahara, Circus-Circus, Stratosphere, etc.) is generally cheaper... and shadier.
Center-strip, there's pretty much just Denny's in the Casino Royale and fast food. Everything is nicer, but more expensive.
If you're staying downtown, the Las Vegas Club has a good, cheap cafe (solid steak & eggs for chump change type place).
Most of the off-strip hotels will have respectable restaurants/buffets for very good prices. AZ Charlie's, all the Station hotels, etc.
If you wanna spend a little money, but not Lutece-type money, there's a PF Chang's in Planet Hollywood, a Cheesecake Factory in the Forum Shops, and ESPN Zone in NY-NY.

It all depends what part of the strip you are staying at. If it is Downtown you can find good deals in most of the casinos there. If it is in the main strip, generally it is expensive, unless you go off the strip, again, it all depends what part of the strip. If you stay close to any main side street, as Tropicana (corners of Excalibur, Tropicana, MGM and New York New York) you can find fast foods restaurants like Wendy's, McDonald's, KFC, In-n-Out Burger) Inside the hotels you can find their food courts but can be a little bit pricey. If you stay close to Flamingo, you can find East or West fast food, East of Flamingo there are some nice restaurants from Sushi, Chinese, Hawaiian, and Terribles Casino, their Bugambilia restaurant has some good deals but I don't recommend the Buffet there. and if you stay close to Sahara Street you can find also some fast food restaurants on the East side. It all depends on whether you are a High Roller or the Average player. The high roller gets comped which is the cheapest. You will have to patronize some of the smaller casinos where dining is less expensive. We found one off the strip opposite Bally's which served a fabulous reasonable lunch and breakfast.

We were in Vegas a couple of weeks ago - (we go at least once a year). We like getting away from the strip for a few hours every day. On one of these adventures we discovered the Black Bear Diner.
Loved it! Big portions, tasty food, and low prices - recommend it to everyone!

There's a very good restaurant called Maggiano's on the strip. Their food for the amount, quality, and atmosphere they offer is VERY good. We just got back from Vegas and I know what you mean about the high prices of food there, even fast food. I had a small Vanilla Latte in Starbucks at our hotel for $4.12!!!!
Their food ranges up to about $20, but the portions are so big that two people can easily share their meal.
Also, the same goes for Cheesecake Factory at Cesar's palace.

One of the casinos on Fremont street has a $9.99 steak and lobster and it's pretty good. I want to say it is across from Binions. I just remember that the resturant is in the basement, but it is a great deal. The Plaza (end of Fremont St. ) also has good meal prices.
Most of the buffets are worth their money if you can eat a lot! $.99 shrimp cocktail is almost everywhere.

It depends upon your mobility. If you have a car head south on The Strip to the Boulevard Bar & Grill, http://www.bellaonline.com/articles/art25128.asp.
Slots-a-Fun next to Circus Circus is famous (or infamous) for it's HUGE hot dog deal. It runs between $1 - 1.50. The quality is hotly debated. I don't care for hot dogs, so I didn't have one. When my son was there competing in the national pool tournament he tried one and said it wasn't bad.
When we went to the Catholic church across from the Luxor we asked locals where to go for breakfast. They all recommended the Ports O' Call at the Gold Coast casino. It was a solidly good breakfast. It wasn't fancy, but it was tasty, filling, and inexpensive.

off the strip is cheaper, maggianos in fashion show is one of the better italian restaurants in vegas it has a happy hour form 4 to 6 half price drinks & entrees they also have a great view of the strip.

off the strip is good, the station casinos all have reasonable buffet pricing, and there food is good, especially the GReen Valley station and Red Rock..
