If one is vegetarian out of mercy towards animals or is opposed to any kind of killing, my answer is yes. But if you are vegetarian because of any other reasons, like health or religion, then it’s not necessary that you will be more peaceful.

There is evidence that consuming meat for some creatures (e.g. dogs), causes a more aggressive behavior. That is the main reason that you don't want to give your pets table scraps of meat.
I don't know if that applies to humans as well, but it has been theorized that humans cannot reach their highest thinking while still consuming a meat-based diet. Pythagoras was a Vegetarian and Einstein was thought to be a Vegan.
One of the criticisms of eating meat, especially considering the spiritual considerations, is that in a society such as ours that is so nonchalant about killing animals for food, is also nonchalant about killing, torturing, and hurting humans as well.

I think Charlie Manson is a vegetarian. I know of at least one serial killer who definitely used to be one. Just because people are careful about what they eat doesn't mean they're doing it in the interest of the animals they're refusing to consume. Cows might be kind of cute or whatever, but prison food is horrid and if you can get away with not having to eat the disgusting crap they claim is meat, you'd do it, no matter how unkind you might actually be.

I have been a Vegetarian for over 13 yrs now, I just can't find it in myself to eat something that once had a head, legs, ears, tail, a brain. It just is too mean for me to do that. I do find that people who do not eat meat, live longer, healthier, happier lives. I guess that is why alto of them turn away from meat, to live longer. Maybe it is the fountain of youth, I don't know, but it is definitely interesting.
