(since the Earth is fatter at the equator than at the poles) Explain how the Mississippi can flow "uphill". I have no idea how to answer this problem, please help if you can! Thank you!

Yes the source is closer. The earth is not a perfect sphere. It bulges at the equator. The farther south you go, the farther you are from the center of the earth. The source of the Mississippi is farther north than the outlet, so the source is closer to the center of the earth than the outlet.

I thought the source of the Miss is in Minnesota. Flowing south to the Gulf. The center has nothing to do with it, since the Earth is round, meaning all points are even to a middle point.

If your premise is true (and it could be), think about what other forces affect the water besides gravity. Think about a marble on a flat, level carousel.
