Helene gave you a great link. On that site you can cach out each theatre's site and see what auditions are coming up and whether or not that theatre has classes available.
You can also check out backstage.com (casting search), actorsaccess.com (set up an account, search the breakdowns) & do an internet search for Texas film and see what sites come up. Those sites for any Texas film associations, alliances, etc. will also have info on auditions, classes, etc.

if you're young (like High School) there are programs at the Alley Theatre, there's also San Jacinto College theatre which has open auditions, and College of the Mainland in Texas City. Galveston has a little theatre scene as well if it's not too far. Good Luck.
