Can anyone help me with evidence both for and against the theory of Plate Tectonics?

Evolution is composed of some empirical evidence - for minor and gradual change over time. But much of evolution is still in the hypothesis stage not having enough evidence to empirically prove it like we have for gravity. We will never see a new organ emerge because they tell us it will take too long. And they look at fossils and then classify them as the most similar and call that evidence. But that doesn't prove evolution - it could have been a Common Designer -not common descent. What we do see, they explain away as an illusion -- the powerful Design in every living cell - unbelievable Design beyond comprehension. Scientists modeled the simplest microbe in the world and there was so much information in that one little cell that it required 128 computers working simultaneously for 9-10 hours just to bring about one instance of cell division. And they tell us to "believe" mutations and duplications of bacterial genes created the most complex thing in the known universe - a brain -- along with a complex and interdependent nervous system and compound eye in an arthropod- during the Cambrian era!? This is beyond the ability of Darwinian evolution according to many scientists and is a hypothesis -- taught as fact. Over 700 men and women of science signed this statement: (see link for names) We are skeptical of claims for the ability of random mutation and natural selection to account for the complexity of life.
