Why does a car make an air being released sound when you move the a/c, defroster, heater control thing?

Nothing to worry about, it's just the actuator that opens and closes the hot/cold flap inside the heating and ventilation system The actuators work off of a vacuum, and the noise you hear is the air being bled to move them.

The hot/cold air doors are opened/closed by vacuum actuators. That's a good noise.

The mechanical mechanism that controls the opening and closing of heat duct output vents is operated by vacuum module. That is why you hear it when you switch from def. to floor or console.
