This is only my thought on this. If the egg has had an chance of being fertilised then it is non veg. If the hen has been raised with the absence of rooster then it is veg. It has no chance of yielding chick so it is merely a fruit and eating has no harm.

Their values are different, due to culture. Western wants to add too much glamor to the whole mix, so it may be a Neptune influence that's involved somehow. On that same note, Vedic is probably more deeply rooted in genuine values, as opposed to what's glamor and get rich quick, something we often see in Western astrology. I'm into Western because that's what I started with, and I find it easier. That may bias my opinion. I have noticed that those into Vedic seem more self-disciplined, as you have noted. They go after a more realistic approach, no shiny frills. It would be hard to trace what cause the value differences, since both go back too far into history that's not clearly defined.

I have no idea what this question means, but you seem to want people to answer it, and I'm trying to earn back points lost in a fake violation, so here you go...
Lord shani does not give one hoot as to whether or not you eat eggs. DO you honestly think that a god who controls the universe gives a doggone what you eat? You are trying to take care of your body, which can be considered a holy endeavour - keep it up. Holy or not, you'll feel better, and you'll find that it is easier to meditate and pray if you are centered both physically and emotionally.

Saturn is the planet of karma.Shani gives the result of any activity whether good or bad , right or wrong. Many people say different things about eggs -but in my view eggs are non vegetarian food. Its better to abstain from eating them
ps- I am no astrologer ,neither I know Vedas

If it is your genuine food, it is ok. If you can avoid it is better.
