In the cell, it forms after glucose is metabolized to pyruvate via glycolysis. The enzyme that effects this conversion is pyruvate dehydrogenase (PDH, or pyruvate carboxylase). So, if there is anerobic metabolism, pyruvate gets converted to lactic acid (lactate), but if metabolism is aerobic, pyruvate enters the Krebs cycle and gets converted along with oxaloacetate to citrate.

It forms from sour dairy products....sour milk, cottage cheese, yogurt, etc.....However, it also can form in your body as you exercise.
