The difference between the different PS3 models is below:
The 80GB and 60GB PS3's are the same except that the 80GB PS3 has more hard drive space, and the 60GB PS3 has better backward compatibility with PS1 and PS2 games because it has the Emotion Engine chip inside of it. The 80GB PS3 comes with Motorstorm as well. The 80GB PS3 is backward compatible, it just cant play as many PS1 and PS2 games as the 20GB and 60GB PS3. The 60GB PS3 can play almost every PS1 and PS2 game ever made.
The 40GB PS3 can play PS1 games, but it cannot play PS2 games, and it only has 2 USB ports (the 60GB and 80GB PS3 have 4 USB ports), the 40GB PS3 does not have the digital camera flash card slots, and of course, the 40GB PS3 has less hard drive space.
The 20GB PS3 is the only model that doesn't have built in WiFi, but it also has the best backward compatibility just like the 60GB PS3 because it has the Emotion Engine chip in it. Also, the 20GB PS3 has 4 USB ports, and the 20GB PS3 does not have the digital camera flash card slots either.
