It depends on what kind of oil you are using. If it's food grade you run it down the sink, just chase it with hot water so it's doesn't clog up the pipes. If it's industrial grade like motor oil or something not edible then go to you local auto parts store to dispose of it. It's legal to introduce this type of oil into the sewer system. Don't polute out planet with it, call around to the auto parts stores and see who can take if for you.

If it is motor oil take it to a junk yard and they can dispose of it for you or take it to a local oil change facility and they can... if it is cooking oil then turn on the hot water as hot as you can in the sink and slowly pour it down.

Soak it into newspaper. Put a bunch of newspaper (don't crinkle, just stacks of paper) in a small trash can and dump the oil/water on it, let the paper absorb it (overnight).

It need to be disposed of as if it were straight oil. Take it to one of the oil collection centers in your town. (gas stations, auto dealers etc)

What kind of oil? Cooking oil can be poured on the ground.
The oil in cars can be poured on the ground (please not near a source of water) but that's not very envioremently good either (and I think illegal).
You could recycle it.

Do you have a gasoline service station which does oil changes ? See if they will take it off your hands. They will put it in their reclaiming tank.

pour it in the back part of the back yard, so it can seep down thru the soil and not contaminate the water supply - of if you live in a city - you can take it wherever you turn in your car oil
