I was thinking about being a foreign exchange student in either spain or ecuador. On the Ayusa website it says for experience: 1 year of spanish for ecuador and 2 years for spain. I have taken 5 semesters or 2 and half years of spanish so far and next semester I will be on AP or advanced placement spanish. I'm still not sure how cofortable I feel about knowing the language but would love to be a foreign exchange student. So how well should you know spanish to be a foreign exchange student in spain or ecuador?

Well, if you can ask the basics (¿Dónde está el baño?, etc.) then you should be ok. If you say you're going to be in AP spanish soon, then you should be more than well qualified.
Many times, many of the natives already know a little english, so it's a little easier for you to communicate.

The only problems I can foresee are if you have any dietary restrictions. I am personally a vegetarian, and having to ask for all the things in each dish gets a little embarrassing.

The less you know, the more you'll learn. I had one and a half years in high school and one in college before I went and I did just fine.
