I know Ben Franklin wanted the turkey to represent the nation.
I just didn't think countries ate their national birds, so I assumed we'd eat something else

I won't pretend to know what people who would choose the turkey as national symbol would want to eat.

Here's some trivia for you- Benjamin Franklin thought the turkey was a better symbol than the Eagle for the new Nation. We would still be eating turkey however, no one ate Eagle at the first Thanksgivings. A lot of other "firsts" food have fallen off the holiday list also-venison, squirrel and rabbit to name a few for most people.

I believe the holiday, Thanksgiving, stems from a fall feast shared by the Pilgrims and the Indians, right? Long before the national bird was selected. So, I'd imagine, we'd still enjoy the popular feast on the table. ;^)

I don't know about everyone else but I'd be eating the same thing, veggie turkey, mashed potatoes and all the fixings minus the meat (Vegetarian here)
