I tend to feel that there is always something lacking when a pianist (usually classical) reproduces the sound from a piece of music. Although I have a degree of respect for the ability to do this, to me this is purely a technical exercise and I would get as similar degree of pleasure from watching a turner produce a nice table leg, or a dentist performing the perfect filling. The piano greats really have to be the top jazz players and I would say that the greatest of all is Art Tatum.

Well, to listen to, go with Liberache or Angela Hewitt...but composer wise, definatly Chopin, Beethoven, or Clementi.

I don't know about listening to them on you tube but some greats are: Johann Sebastian Bach, Johannes Brahms, Frederic Chopin, George Frederic Handel, Wolfgang Amadeus Mozart, and Antonio Lucio Vivaldi are my personal favorites.

Chopin - Liszt - Rachmanninov - Mussorgsky

NOT Bach (for me anyway, I prefer the original instrument - although many recordings of Bach use piano)

Oh - and try Flanders and Swann... Superb!!

Ok...although many of the answers given so far are indeed incredible pianists (although some answers were just ludicrous) they are not what most people consider to be "the masters" that you are looking for. I know Chopin, Beethoven, Mozart were indeed great pianists...but we actually don't know for sure how good...because NO ONE ALIVE HAS EVER HEARD THEM! Baroque Period: J.S. Bach, Scarlatti, (Handel and Vivaldi are not standard for pianists)
Classical Period: Haydn, Mozart, Beethoven, Clementi
Romantic Period: Brahms, Rachmaninoff (there are recordings of him playing his own works), Liszt, Chopin, Schumann, Schubert, Scriabin
Impressionist: Debussy, Ravel
20th Century/Modern: Prokofiev, Stravinsky, Schoenberg, Copland, Shostakovich, Bartok, George Crumb and John Cage (in certain opinions)
21st cent./post-modern: John Corigliano, Lowell Lieberman, Gyorgy Ligeti
