Evade is the first one that comes to mind. Other options might be defer, stall, outpace...

Depends. Could be "postpone", if it's a natural cause like disease. Could be "draw out" or "prolong", if someone's torturing another person and wants them to suffer (sorry, morbid). Could be "cheat" if they're doing a lot of stupid stuff and testing their luck. Could be "avoid" for the former as well, if you're personifying death in any way. If he's stalling because someone's going to kill him, he might be trying to "stay" an execution... you know, stall.

Other possibilities: suspend, defer, restrain, put off, suppress, elude, avoid, escape, evade... it depends on the context.
