I have a bunch of squash I want to use quickly, and was thinking I might could use some of it for Thanksgiving dinner but other than breading it and frying it, I don't know how to prepare it to look and taste festive. Is yellow squash an appropriate dish for the holiday? Does anyone have any reciepes I can use that would make the squash work well with my holiay feast?

I have yellow summer squash. I do not have butternut squash or any other squash, just yellow 1 1/2 inch to 2 inch diameter at the biggest point. Thanks though for the tip on how to make butternut squash.

I also didn't know there was a winter yellow squash or how to tell which one I have, summer or winter. thanks.

One of the easiest things you could do is just slice it up and steam it. It is really good steamed with a little butter and salt and pepper, and will add some nice color to the table.

Butternut and pumpkin squash are native to the U.S. The best way to cook butternut squash is to Bake it. Cut the squash in half length way. Scoop out the seeds and put it on tinfoil on a cookie sheet cut side down. Bake it at 350 deg for about an hour or until soft. After it cools down enough to handle scoop out the flesh, and mash or blend smooth. At this point you can freeze extra, and it is great and quick to heat up. Add some butter a little salt and a small amount of maple syrup. Be careful when you heat it up, it burns easily.

The one I particularly love is 'Squash Apple Dish'. It's so yummy! The recipe for zucchini may be used for yellow summer squash as well. I'm not sure which kind of yellow squash you're referring to ... summer or winter.

Get a recipe for scalloped potatoes,but instead of the potatoes use the sliced squash cheesey and creamy add a little parsely for color. Bake and serve yum. Good luck Happy Thanksgiving.

Peel it, slice it 1/4 thick on a mandolin lengthwise. Toss with olive oil, rosemary, salt and pepper. Grill until softened and there are grill marks. serve as an appetizer (room temperature) along with marinated mushrooms, cheeses, olives, etc.
