So far I set up a small referigator, micro-wave, paper napkins,
salt and pepper. There is a motor van that drives by each day to offer snacks and mexican food to buy. Should I offer bottle drinking water or set out a coffee pot with coffee. Or have a
B-Q dinner on Friday around 5:00.

You are on the right track!
Keep some water around but if you really want them to look forward to your job, make Friday morning breakfast! Cooking Friday nights is going to crowd their much anticipated weekends.

Coffee is a splendid idea! I wouldn't do the food thing though, not until the job is 'completed'. Have a wrap-up party! Have a BBQ and invite all who worked on the job. (just like they do on "this old house") It will give the workers incentive to get the job completed asap, and do a better job too!

Coffee is always good in the mornings and anytime through the day, especially when it's chilly.

Forget the health food, think meat and potatoes, sandwiches, hot dogs, ..... hearty food.

Donuts are also good any time of day.

Bottled water is good, they'll also appreciate gatorade.

Cold beer is nice at the end of the day too.

If you feed them they will slow down and the work will never get done. Promise to pay them when the work is done and send them on their way.
