A type of 'fudge' made with with white chocolate

Here's one recipe for you to try :-)

2 1/2 c sugar

1/2 c light corn syrup

1/2 c water

Pinch salt


2 egg whites

1 tsp vanilla

1 c pecans


Combine sugar, syrup, and water in heavy saucepan. Stir over low heat until boiling. Cover and cook for 3 minutes. Remove cover and cook to soft ball stage. Beat egg whites and salt until stiff. Pour 1/2 of sugar mixture over egg whites. Cook remaining syrup until hard ball stage. Add to eg white mixture beating constantly. Add vanilla and nuts. When it begins to lose its gloss, drop by teaspoon onto waxed paper.

I started to answer this thinking you would have a lot of recipes from other folks, but you don't. Divinity is nothing like fudge. It is light and airy. It is excellent candy and should be made with finely chopped walnuts or no nuts at all. Here is my 80 year old recipe.
Place in a sauce pan and stir over low heat until dissolved: 3 cups sugar, 3/4 cup of water, 3/4 cup white corn syrup. Cook over med. heat, without stirring to the crack stage, 290 degrees. You can test by dropping a spoon of mix back into pan. If the last few strings fly up it's the crack stage.
Meanwhile beat until stiff 3 egg whites, 1/8 teaspoon salt. Gradually pour a little of the hot syrup into the egg whites, beating constantly. Keep the remaining syrup boiling over low flame. Add it, little by little, to the egg whites, beating constantly. When all of it is beaten in add 1 teaspoon of vanilla and 1 cup broken nut meats. Continue to beat until the mixture stands up well and loses it's gloss. Drop it from a spoon in rounds on waxed paper. You should have a heavy duty mixer for this. I burned up a portable once. You need low humidity also. Try it, it's great.

My mom and I used to buy divinity candy when we'd find it and share. It was a special treat of a fluffy white fudge with pecans. Mom has diabetics now and I'm allergic to corn (syrup), so we can't have it anymore, but thinking of it brings back good memories.

It's often called Divinity fudge - but it isn't a fudge at all. It's quite chewy - a white candy, made with egg whites - and has nuts and fruit in it. It isn't hard to make at home and you can put whatever you want in it. I like it with apricots instead of maraschino cherries.

You have your answers to the question, when I make it it is a shiney blob on a piece of wax paper, takes 10 minutes to stick your teeth in it and another 10 to chew your little bite up. Kids used to call it mom's hockey pucks.

it is a candy made of milk sugar and eggwhites, you make a hot syrup and whip it into whipped egg whites. It turns out very much like fudge in consistency

Divinity, isn't one of my favorites, I've got weird tastes I guess. It's sort of like eating marshmallow creme with nuts in it....Sorry, that's the only way I know to describe it.
