The thing that would concern me is why the benefits coordinator is looking at your paystub. It makes me wonder if they are trying to determine how much you might have been paying for medical insurance with your previous employer. For example, did you have a family plan or were you insured for yourself only. If they are trying to screen out potential applicants based on medical or marital status, this is illegal.
If you have any other options open at all, I would stay away from working for this company.

There is no way in he11 I would send or give anyone my pay stub. What I make is no ones business, and questioning what certain codes mean, is even farther off base. This sounds more like an elaborate scam to get information to rip off you or your company.or your identity. There is something not right about this, as I have never been asked for a paystub, transcripts yes. Walk away

It's not illegal. And requiring transcripts of post-high school education is pretty common. Asking for a pay stub is a bit unusual, but sounds like they are trying to verify that you really made what you told them you do.

Anything you give them voluntarily is legal, but it sounds insanely nosy. I would never share that kind of info with a potential employer who hadn't even made a firm job offer yet. I hope your social security number wasn't on your check stub. At the very least they are trying to pay you as little as possible, and at worst they are crooks. Hope you get offers elsewhere.
